8 flour tortillas
 
3/4 cup black olive paste or finely chopped pitted black olives 175 mL
 
1/2 cup mayonnaise 125 mL
 
1 lb thinly sliced rare roast beef 500 g
 
4 cups shredded romaine lettuce 1 L

Directions

Arrange tortillas in single layer on work surface.
Combine olive paste with mayonnaise; spread over tortillas.
Cover with slices of meat, leaving 1 inch (2.5 cm) border at one end.
Top with lettuce.
Starting at end with meat, roll up tightly, sealing border with mayonnaise mixture.
Wrap tightly and refrigerate for up to 4 hours.
Cut each roll into 6 to 8 slices; arrange, cut sides up, on platter.
