Roast Beef Recipe
Ingredients
| 1 rib roast of beef (about 7 lb/3.15 kg) 1 | ||
| Garlic | 1 Clove (5gm), slivered | |
| Pan Gravy | ||
Directions
Cut slits in roast and insert garlic slivers; let roast stand at room temperature for 30 minutes.
Place, rib side down, on greased rack in roasting pan; roast in 325 °F (160T) oven for about 2 hours and 20 minutes for rare or until meat thermometer registers 140°F (60°C) or until desired doneness.
Transfer roast to warm platter, reserving pan juices for gravy.
Cover with foil and let stand for 20 minutes before carving and serving with Pan Gravy.
