Roast Wild Duck Recipe
Ingredients
1 wild duck
1 tablespoon Irish Mist liqueur
1 onion
2 slices fat bacon
1 orange
Directions
Put the onion into the belly of the duck.
Tie the slices of bacon over the breast and put the bird into a hot oven (400°) for 20 minutes.
Remove the bacon.
Add the liqueur, the juice of the orange, and half the grated rind.
Baste well.
Bake a further 15 minutes.
Season and de grease the gravy and serve over the duck.
All these small birds should be baked in small containers.
If you put them into a large roasting pan the gravy will dry up.
