Roast Wild Boar Recipe

Venison may be used instead.
Trim the meat and rub in the salt and paprika.
Wrap the bacon slices around the meat and stick with cloves.
Place in a roasting pan with the oil and roast in a moderately hot oven (400° F) for 1-1 1/2 hours.
Transfer the meat to a serving dish.
Remove the excess fat from the pan and stir in the flour.
Cook for 1-2 minutes, stirring.
Gradually stir in the apple juice and stock.
Bring to the boil, stirring, and cook for 1-2 minutes.
Stir in the cranberry sauce and seasoning.
Serve with the boar.
Potato croquettes are a good accompanying vegetable to this dish.
