Roast Squab With Mustard Recipe

Ingredients

 
6 squabs
 
6 tablespoons butter
 
Salt and pepper to taste
 
2 tablespoons mustard
 
3/4 cup dry red wine
 
3/4 cup heavy cream
 
2 tablespoons chopped parsley

Directions

Rub each squab with butter.
Place breast side up on rack in roasting pan.
Salt and pepper birds to taste.
Place in 425° F oven and roast 25-30 minutes or to desired doneness.
Remove from oven and keep warm.
Remove rack from pan.
Add to pan mustard, wine, cream, and parsley.
Bring to a boil.
Reduce a few minutes, to thicken.
Place squabs on serving platter.
Pour sauce over birds.
