Ingredients
| 1 goose (8 to 10 pounds) | ||
| 3 to 4 cups cooked wild rice | ||
| All-purpose flour | ||
| 1/2 teaspoon each of crumbled dried tarragon and thyme | ||
| Salt pork strip | 4 | |
| Dry red wine | 1/2 Cup (16 tbs) | |
| 1/2 cup beef bouillon | ||
| Melted butter | 2 Tablespoon | |
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Wipe goose with a damp cloth.
Stuff with rice and close opening.
Rub goose with salt, pepper, flour, tarragon, and thyme.
Place on a rack in a roasting pan.
Lay pork slices over breast.
Roast in preheated hot oven (400°F.) for 10 minutes.
Reduce heat to slow (325°F.) and continue to roast for 1 1/2 hours, or until tender (this will depend on the age of the goose).
Baste several times with wine mixed with bouillon and butter.
Makes 6 to 8 servings.
