Roast Shoulder of Lamb Recipe
Ingredients
| Lamb shoulder | 4 1/2 Pound | |
| 1 clove garlic, cut | ||
| Salt | 2 Teaspoon | |
| Pepper | 1/4 Teaspoon | |
| Dried basil leaves | 1 Teaspoon | |
Directions
1. Preheat oven to 325F.
2. Wipe meat with damp cloth. Unroll lamb; rub inside portion with garlic, and sprinkle with combined salt, pepper, and basil. Roll up; tie with twine.
3. Place on rack in shallow roasting pan. Insert meat thermometer, away from fat, in center of lamb.
4. For well-done lamb, roast 2 1/2 hours, or until meat thermometer reads 182F.
