Ingredients

 Pork loin roast1 1/2 Pound, rolled
 4 tbsp. butter or lard, melted
 3 medium-sized potatoes, thinly sliced
 1 large onion, thinly sliced and sauteed in butter until soft but not colored
 Bouquet garni1
 Chopped fresh parsley
 Salt To Taste
 Pepper To Taste

Directions

Season the pork with salt and pepper, and put it into a large, oval ovenproof dish.
Brush the meat with a little of the melted butter or lard and put it in a preheated 400° F. [200° C] oven for 15 minutes.
When the meat is browned all over, surround it with the potatoes and the sauteed onion.
Season the potatoes and onion with salt and pepper.
Put into the dish, buried in the potatoes, the bouquet garni.
Sprinkle the potatoes with the remaining butter or lard.
Cover the dish and put it in a 325° F. [170° C] oven to bake for 50 minutes.
Take out the bouquet garni, sprinkle the potatoes with chopped parsley, and serve from the cooking dish.
