Ingredients
| 1.5 kg / 3 lb loin of pork, with bone in and rind scored | ||
| Salt | 1 Tablespoon | |
| Apple stuffing | ||
| 30 g / 1 oz butter | ||
| 1 green apple, cored, peeled and finely chopped | ||
| 60 g / 2 oz breadcrumbs, made from stale bread | ||
| 1 teaspoon finely grated lemon rind | ||
| Ground allspice | 1 Teaspoon | |
| 1 tablespoon apple jelly | ||
| Sultanas | 3 Tablespoon | |
Directions
1. Using a sharp knife, make a pocket in the pork by separating bones from meat, leaving both ends intact.
2. To make stuffing, melt butter in a frying pan and cook apple for 2-3 minutes or until soft. Remove pan from heat and stir in breadcrumbs, lemon rind, allspice, apple jelly and sultanas.
3. Pack mixture into pocket in pork and place on a roasting rack in a baking dish. Rub rind of pork with salt and bake at 250°C / 500°F / Gas 9 for 20 minutes. Reduce heat to 190°C / 375°F / Gas 5 and bake for 1 hour longer or until meat is cooked through. Stand for 10 minutes before carving.
