Roast Pork Stuffed With Apricots Recipe
Ingredients
| Dried apricots | 4 Ounce | |
| 4 oz soft breadcrumbs | ||
| Onion | 1 Small, chopped | |
| 1 tab. fresh parsley | ||
| Dry mustard | 1 Teaspoon | |
| Egg | 1 | |
| Black pepper salt | 1 To taste | |
| Butter | 1 Ounce | |
Directions
Saute the onion in the butter.
Add the rest of the ingredients, and bind well with beaten egg.
Spread this mixture inside the meat's cavity, and tie the joint neatly.
Roast in a fairly hot oven, allowing a good 40 minutes to the pound, stuffed weight.
Baste frequently.
