Roast Pork Party Style Recipe
Ingredients
| 3-pound loin of pork | ||
| Onion slice | 6 | |
| Apple slice | 3 , cut in half | |
| Sage | 1/4 Teaspoon | |
| Cream of chicken soup | 1 Can (10oz), condensed | |
| 1/4 cup Madeira or Sherry | ||
| Water | 1/2 Cup (16 tbs) | |
Directions
Make 6 slits almost to bone in pork loin.
Place a slice of onion and 1/2 slice apple in each slit.
Rub roast with sage.
Tie securely.
Roast fat side up at 325°F. for 2 hours.
Pour off fat.
Combine soup and Madeira; pour over meat.
Roast 30 minutes more or until done, basting often with soup (total roasting time takes 35 to 40 minutes per pound or 170°F.
on meat thermometer).
Remove meat from pan.
On top of range, in roasting pan, add water to soup.
Heat, stirring to loosen browned bits.
