Roast Pork In A Blanket Recipe
Ingredients
| 1.5 kg / 3 lb lean pork loin joint | ||
| 1 eating apple, cored and grated | ||
| Breadcrumbs | 40 Gram | |
| 30 ml / 2 tbsp chopped hazelnuts | ||
| 15 ml / 1 tbsp Dilon mustard | ||
| Snipped chives | 15 Milliliter | |
| Black pepper salt | 1 To taste | |
Directions
1. Cut the skin from the pork leaving a thin layer of fat.
2. Preheat the oven to 220°C/425°F/ Gas 7. Place the meat on a rack in a roasting tin, cover with foil and roast for 1 hour, then reduce the oven temperature to 180°C/350°F/Gas 4.
3. Mix together the apple, breadcrumbs, nuts, mustard, chives and seasoning. Remove the foil and spread the breadcrumb mixture over the fat surface of the meat.
4. Cook the pork for 45-60 minutes, or until the meat juices run clear. Serve in slices with a rich gravy.
