2 to 2 1/2-lb. sirloin roast
Season meat with salt and pepper
Directions
Choose a 2- to 2 1/2-lb. sirloin roast.
Heat oven to 325° (slow mod.).
Season meat with salt and pepper.
Place fat-side-up on rack in open pan.
If you have a meat thermometer, insert it through outside fat in thickest part of meat.
Roast 30 to 35 min. per lb., or until meat thermometer registers 175° (medium) or 182° (well done).
Do not baste, do not cover, do not add water.
