Roast Goose With Apple Stuffing Recipe
Ingredients
1/4 cup butter, margarine or goose fat
2 stalks celery, thinly sliced
2 medium onions, finely chopped
3 to 5 cups fresh bread cubes
2 medium apples, chopped
1 egg, beaten
1/4 cup brandy
1 tablespoon parsley flakes
1 teaspoon salt
1/4 teaspoon pepper
9 to 10 pound goose
Browning sauce
Directions
In large glass bowl, combine butter, celery and onion.
Cook at HIGH 5 to 6 minutes, or until celery and onion are tender.
Add bread, apples, egg, brandy, parsley, salt and pepper; combine thoroughly.
Stuff goose with apple mixture.
Secure opening with wooden toothpicks or cotton string.
Secure wings and legs to body of bird with cotton string.
Pierce skin several times.
Arrange bird breast-side down, on microwave roasting rack set in 12x8-inch dish.
Brush with browning sauce.
Cook at MEDIUM 30 minutes.
Turn bird over and drain fat.
Cook at MEDIUM 25 to 30 minutes, or until tender.
Let stand, covered, 15 minutes before serving.
