1 ready-to-cook duckling (5 pounds)
Cherry Sauce
Buttered rice (optional)
Directions
1. Remove giblets from duckling and wash duckling. (It is recommended that giblets be cooked conventionally.)
2. Secure openings with heavy round wooden picks. Tie legs and wings to body with string. Prick skin of duckling with a 2-tined fork. Cover ends of wings, legs and tail of duckling with small pieces of aluminum foil.
3. Place duckling breast-side-down on a microwave-oven-safe roast rack set in an 8-inch square or a 2-quart glass baking dish. Cook uncovered in microwave oven 10 minutes at High.
4. Brush duck with drippings. Cook uncovered in microwave oven 14 minutes at Medium-High. Brush bird with drippings. Cook uncovered 14 minutes at Medium-High.
5. Turn duck breast-side-up, remove foil and brush with drippings. Cook uncovered in microwave oven 14 minutes at Medium-High, or until drumstick feels very soft when pressed between protected fingers.
