Ingredients

 Apples3 , pared
 Carrots2 , grated
 1 finely diced Spanish onion
 2 finely diced celery stalks
 Seedless raisins250 Milliliter
 Walnuts250 Milliliter, blanched
 Milk125 Milliliter
 3 ml each of salt, pepper
 Marjoram5 Milliliter
 750 ml cubed stale bread
 Goose4 Kilogram
 Garlic1 Clove (5gm)
 Safflower oil15 Milliliter
 Paprika3 Milliliter
 Cornstarch5 Milliliter

Directions

Mix the apples, carrots, onion, celery, raisins, walnuts, bread, milk and seasonings together.
Stuff the mixture into the goose, truss the goose.
Place in a large roaster.
Rub goose with garlic and brush with the oil.
Sprinkle with paprika.
Place in a preheated 350°F (180°C) oven for 3 1/2 to 4 hours.
Baste several times during cooking.
When the goose is cooked remove from the roaster, place on a serving platter and keep warm.
Deglaze the pan juices, mix the cornstarch with 2 tbsp (30 ml) of water.
Pour into pans juices.
Bring to a boil.
Strain into a sauce boat and serve with the goose.
