Roast Christmas Goose Recipe
Ingredients
| Apples | 3 , pared | |
| Carrots | 2 , grated | |
| 1 finely diced Spanish onion | ||
| 2 finely diced celery stalks | ||
| Seedless raisins | 250 Milliliter | |
| Walnuts | 250 Milliliter, blanched | |
| Milk | 125 Milliliter | |
| 3 ml each of salt, pepper | ||
| Marjoram | 5 Milliliter | |
| 750 ml cubed stale bread | ||
| Goose | 4 Kilogram | |
| Garlic | 1 Clove (5gm) | |
| Safflower oil | 15 Milliliter | |
| Paprika | 3 Milliliter | |
| Cornstarch | 5 Milliliter | |
Directions
Mix the apples, carrots, onion, celery, raisins, walnuts, bread, milk and seasonings together.
Stuff the mixture into the goose, truss the goose.
Place in a large roaster.
Rub goose with garlic and brush with the oil.
Sprinkle with paprika.
Place in a preheated 350°F (180°C) oven for 3 1/2 to 4 hours.
Baste several times during cooking.
When the goose is cooked remove from the roaster, place on a serving platter and keep warm.
Deglaze the pan juices, mix the cornstarch with 2 tbsp (30 ml) of water.
Pour into pans juices.
Bring to a boil.
Strain into a sauce boat and serve with the goose.
