Roast Chicken With Lime And Herbs Recipe
Ingredients
| 4 chicken quarters | ||
| Virgin olive oil | 2 Tablespoon | |
| 1 teaspoon ginger pulp | ||
| 1 teaspoon garlic pulp | ||
| Lime juice | 4 Tablespoon | |
| Green chilli | 1 , chopped | |
| Coriander leaves | 6 Tablespoon, chopped | |
| 1 tablespoon chopped fresh mint, plus more | ||
| Shredded leaves for garnish | ||
| Salt | To Taste | |
| Ground black pepper | 1 Teaspoon | |
| Tomatoes | 2 , sliced | |
| Lime wedges | ||
Directions
1. Remove the skin from the chicken, prick it all over with a fork and set: aside in a heatproof dish.
2. In a bowl, mix together the olive oil, ginger, garlic, lime juice, green chilli, fresh coriander, mint and salt to taste. Mix well and pour it over the chicken pieces. Use a brush to ensure they are evenly coated. Sprinkle with the ground black pepper and top with the sliced tomatoes. Cover with foil and leave to marinate for about 1 hour.
3. Preheat the oven to 190°C/375°F/gas 5. Cook for 35-40 minutes, basting once or twice.
