Roast Beef Salad Recipe
Ingredients
6 ounces cooked roast beef, cut into slices 1/8inch thick
1 medium (3-ounce) potato, boiled and sliced
1 gherkin, chopped
2 ounces red onion, chopped, or 1 tablespoon chopped chives
Salt and pepper
Dash parsley
1 tablespoon vegetable oil
1 tablespoon wine vinegar
Lettuce
1 medium tomato, cut into wedges
Watercress
Directions
Combine beef, potato, gherkin, onion (or chives), salt, pepper and parsley; stir in oil and vinegar.
Chill for half an hour.
Chill for half an hour.
