Ingredients

 
5 lb. rib roast of beef
 
1 tablespoon lard or fat
 
3 cloves garlic, minced, plus
 
2 tablespoons flour
 
Sliced garlic for stuffing beef
 
2 onions, minced
 
Salt and pepper

Directions

Wipe the beef and stuff small slices of garlic into it.
Rub salt and pepper into the meat.
Grease it with fat and sprinkle with flour.
Put the roast in a baking pan, uncovered, with 3 cups water, the onions, garlic, and the rest of the flour.
Roast in a hot oven (450°) until the meat is well browned.
Baste every 10 minutes.
