Ingredients

 
1 head per serving, split in half and tied with a string to keep brains intact
 
Juice of 1 lemon
 
2 tablespoons olive oil
 
1 tablespoon oregano or more to taste
 
Salt and pepper to taste

Directions

1. Soak head in cold salted water for 1 hour. Drain. Pat dry. Cut string and place halves in a shallow pan, brains up.
2. Combine lemon juice, olive oil, oregano, salt, and pepper. Drizzle over head.
3. Roast in a 350°F oven for about 20 minutes, basting frequently until brains are tender. Remove brains with a spoon and keep warm. Continue roasting about 45 minutes more, or until other parts are tender.
