Roast Angler Recipe
Preparing this Roast Angler recipe is the second best way to please a crowd. Am sure you are aware of the first??? There is not a single month when I don't serve this yummy Appetizer! The Roast Angler is made with Fish which is easy to procure from any grocery store. Serve this Roast Angler at the table today and watch it disappear in delight!
Ingredients
1 2 1/4 lb angler
2 garlic cloves, in pieces
6 bacon slices
Olive oil for basting
3 tbsp olive oil
1 lb tomatoes, peeled, cut into wedges
10 oz mushrooms, minced
Savory and rosemary
Salt and pepper
1/4 cup sour cream
Directions
Preheat oven to 400 °F (205 °C).
Remove fish backbone.
Stick flesh with garlic pieces.
Wrap angler in bacon strips.
Tie with a string.
Brush with oil.
Roast in oven 30 minutes or so.
Turn over 3 times during cooking.
Baste often with oil.
In a skillet, heat 3 tbsp (45 mL) oil.
Lightly brown tomatoes and mushrooms.
Season to taste.
Over low heat, cook vegetables.
Fold in cream, mixing well.
Spoon over angler.
