Risotto Recipe

Ingredients
1 cup plus 2 tablespoons long grain rice
2 1/4 cups boiling water
4 tablespoons butter
Salt and pepper
1 cup frozen peas
4 ham steaks
2 hard cooked eggs, chopped
1/2 red pepper, deseeded and chopped
Directions
1 Place rice, boiling water, half the butter and salt into a 2.25 litre/4 pint (10 cup) mixing bowl, cover with plastic wrap and pierce.
2 Microwave on full power for 10 minutes.
3 Remove from microwave oven, stir and stand covered with a clean tea (dish) towel.
4 Place the peas in a small container. Add remaining butter, cover with plastic wrap and pierce. Microwave on full power for 2 minutes. Set aside.
5 Arrange bacon on 2 sheets kitchen paper in a circular fashion with fat side to the outside. Microwave on full power for 5 minutes turning steaks over once half way through cooking. Cool and chop.
6 Combine rice, chopped egg, peas, red pepper and bacon and serve.
