Risi E Bisi Italian Rice and Peas Recipe
Ingredients
| Hot & firmly cooked brown rice - 2 cups | ||
| Boiling water | 1 Cup (16 tbs) | |
| Instant chicken broth and seasoning mix - 2 envelopes | ||
| Onion flakes | 1 Teaspoon, dehydrated | |
| Parsley | 2 Teaspoon, minced | |
| Pepper | 1 To taste | |
| Few drops of sherry extract | ||
| Margarine | 1/4 Teaspoon | |
| Frozen green peas - 1 package (16-ounce) | ||
Directions
MAKING
1) Take a small saucepan and combine all ingredients in it.
2) Bring the mixture to a boil. Reduce heat and simmer, covered, for about 15 minutes or until pears become soft.
SERVING
3) Transfer to a serving platter. Garnish with chopped parsley, if desired.
TIP: You can remove cover and simmer if rice and peas become too moist.
