Risi E Bisi With Ham Recipe
Ingredients
| Margarine-1 tablespoon plus 1 teaspoon -divided | ||
| Onion-1/2 cup-diced | ||
| Boiled ham-4 1/2 ounces-diced | ||
| Converted enriched rice-2 ounces-uncooked | ||
| Parsley sprigs | ||
| Peas | 1/2 Cup (16 tbs) (Garnish) | |
| Chicken broth | 1 1/2 Cup (16 tbs) (Garnish) | |
| Parmesan cheese-1 ounce-grated | ||
Directions
MAKING
1. In a 1 1/2- or 2-quart saucepan, place the 2 teaspoons margarine
2. Heat the margarine over medium heat till it is bubbly and melted
3. Add onion to the pan and sauté till transparent
4. Add the ham, rice and peas to the pan and cook on gentle heat till the rice is opaque and transparent. This will take about two minutes
5. Add broth to the pan and bring it to a boil
6. Reduce the heat of the pan and simmer on low heat till all the liquid is completely absorbed
7. Remove the pan from the heat
8. Add in the cheese and stir well
9. Add the rest of the margarine and mix well again
10. Transfer to the serving dish
SERVING
11. Garnish with parsley
12. Serve hot immediately
