Parsley Risi E Bisi Recipe
Ingredients
3 slices bacon, diced
4 green onions, peeled and diced
2 tbsp (30 mL) butter
1 tbsp (15 mL) vegetable oil
1 cup (250 mL) long grain rice
2 cups (500 mL) fresh green peas
1/4 cup (60 mL) fresh parsley, minced
3 cups (750 mL) hot water or chicken consomme
Directions
€¢ Place the bacon in an 8-cup (2 L) microwave-safe dish.
€¢ Microwave 1 minute at HIGH.
€¢ Add the green onions and the butter. Microwave 2 minutes at MEDIUM-HIGH. Stir well.
€¢ Add the vegetable oil and the rice. Stir until the whole is well mixed. Add the green peas, stir again.
€¢ Add the parsley and hot water or chicken consomme. Stir again. Cover and microwave 20 minutes at MEDIUM. Stir with a fork.
€¢ Test the doneness of the green peas and the rice. If necessary, microwave another 5 minutes at MEDIUM.
€¢ Let stand 5 minutes.
€¢ Microwave 1 minute at HIGH.
