Ripe Jackfruit Fritters Recipe
Ingredients
| 250 gms. ripe jackfruit pulped | ||
| Raisin | 250 Gram | |
| Sugar | 275 Gram | |
| Coconut | 100 Gram, finley grated | |
| 3 eggs, well whisked | ||
| Raisins | 2 Tablespoon | |
| 1 tbsp. cardamom and nutmeg powder | ||
| Salt | 1 Pinch | |
| Ghee for frying | ||
Directions
Place the sugar and whisked eggs in a bowl and beat: till the sugar has dissolved.
Gently add the self-raising flour and mix well. Then add the fruit pulp, raisins and the cardamom-nutmeg powder and salt and mix vigorously. Allow to sit for 1/2 an hour.
Take a thick bottomed skillet or non-stick frying pan and fill it with 1/2" ghee. Heat over a medium flame. When hot, pour large spoonfuls of batter. Fry in small batches. Cook on both sides till golden brown and transfer onto a fancy glass dish.
Serve with tea.
