Ingredients

 
1/4 cup (60 mL) olive oil
 
1 medium onion, finely minced
 
1/2 cup (125 mL) fresh tomatoes, peeled and
 
diced 1 1/2 cups (375 mL) clam juice
 
1/2 lb (250 g) fish fillets of your choice
 
2 cups (500 mL) dry white wine
 
1/4 cup (60 ml) long grain rice
 
1/4 tsp (1 mL) curry powder
 
Salt to taste

Directions

Place the olive oil in an 8-cup (2 L) microwave-safe bowl, microwave 3 minutes at HIGH.
Add the onion and the tomatoes.
Mix well.
Microwave 4 minutes at HIGH.
Add the remaining ingredients.
Stir and microwave 8 to 12 minutes at HIGH.
Salt to taste.
