Ingredients

 
2 tablespoons olive oil
 
1 medium onion, finely chopped
 
3 garlic cloves, finely chopped
 
5 medium green tomatoes, peeled, chopped
 
1 beef bouillon cube
 
1/4 pound smoked ham, finely cubed
 
6 or 7 fresh sweet basil leaves
 
1/4 teaspoon hot red pepper flakes
 
Salt if necessary
 
1 to 2 teaspoons sugar (optional)
 
16 ounces rigatoni, cooked al dente, drained
 
3/4 cup grated Parmesan cheese

Directions

Heat the olive oil in a saucepan over medium heat.
Saute the onion and garlic in the oil until onion is translucent.
Stir in the green tomatoes.
Reduce heat to low.
Cook slowly for 10 to 15 minutes, stirring frequently.
Mash the tomatoes with a fork; if sauce is too dry, add a little water.
Add the bouillon cube, ham, basil, hot red pepper flakes and salt; stir well.
Cook slowly for 10 minutes longer.
Taste, and add sugar if sauce is too sour.
Toss the pasta with the tomato mixture and the Parmesan cheese.
