Ridgetown Corn Relish Recipe
Ingredients
| Corn cobs | 12 | |
| Cucumbers | 1 Quart | |
| 6 sweet green peppers | ||
| Sweet red pepper | 1 To taste | |
| 1 quart red or green tomatoes | ||
| Onions | 1 Quart | |
| White sugar | 5 Cup (16 tbs) | |
| 5 cups vinegar, cider, or white wine | ||
| Celery seed | 1 Tablespoon | |
| Dry mustard | 1 Tablespoon | |
| Turmeric | 1/2 Tablespoon | |
| Salt | 1 Tablespoon | |
Directions
Cut kernels off cobs.
Reserve.
Put the cucumbers, peppers, tomatoes, and onions through the coarse blade of a grinder.
Combine all the vegetables except the corn with the rest of the ingredients.
Boil 1 hour over moderate heat.
Add the corn.
Boil 20 minutes.
Pour into sterilized jars.
Seal.
