 4 cups Ricotta cheese or small-curd cottage cheese, pushed through a sieve
 Egg yolk1
 Sugar1/3 Cup (16 tbs)
 Salt1/4 Teaspoon
 Orange peel2 Tablespoon, grated
 Vanilla extract1 Teaspoon
 1 tablespon Amaretto liqueur or Marsala wine
 Egg whites3

Directions

1. Mix cheese, egg yolk, sugar, salt, grated orange peel, vanilla extract, and Amaretto liqueur or Marsala wine. Beat until smooth.
2. Fold in egg whites, beaten stiff but not dry, and pour into pastry shell. Optional. Add one or more of the following to the Ricotta Cheese Filling mixture: 1 tablespoon raisins, diced candied citron, or diced candied lemon or orange peel; or 2 tablespoons slivered blanched almonds, pine nuts, or semi-sweet chocolate bits.
