 1 pound whole milk ricotta cheese
 Sugar3/4 Cup (16 tbs)
 Eggs2
 Lemon peel1/2 Teaspoon, freshly grated
 Vanilla1/2 Teaspoon
 Lemon and/or orange slices (garnish)

Directions

Preheat oven to 350°F.
Generously butter a 6-cup bundt pan.
Combine all ingredients except garnishes in food processor or blender and mix until smooth.
Pour into prepared pan and cover with foil.
Place in pan of water and bake until firmly set, about 1 hou'r.
Allow to cool.
Dip bottom of pan in hot water and unmold onto serving platter .
Refrigerate until ready to serve.
Garnish with lemon and/or orange slices, and fresh fruit or sauce, if desired.
