Rich Brown Sauce Recipe

Ingredients

 
2 slices bacon
 
1 onion
 
1 stalk celery
 
1 carrot
 
4 large mushrooms
 
2 tablespoons oil
 
1/4 cup all-purpose flour
 
2 cups beef stock
 
2 tablespoons concentrated tomato paste
 
1 bay leaf
 
a sprig of parsley
 
salt and pepper

Directions

Chop the bacon finely .
Chop the onion finely .
Chop the celery, carrot and mushrooms finely .
Heat the oil in a pan and cook the bacon and vegetables over low heat until the onions are soft and golden.
Add the flour and stir well for 2 minutes over low heat.
Add the stock gradually and then the remaining ingredients.
Bring to a boil, cover and simmer for 45 minutes.
Remove the bay leaf and parsley.
Process the sauce in small quantities until smooth .
Return to the pan and simmer for 10 minutes.
Use for meat dishes.
