Rich Apple Bars Recipe

Ingredients
Crust:
3/4 cup butter, softened
1/4 cup sugar
1 egg, beaten
1 teaspoon vanilla extract
2 cups flour
1/4 teaspoon salt
Topping:
1/2 cup flour
1/3 cup sugar
1/2 cup butter, softened
Filling:
5 cups peeled and thinly sliced tart cooking apples
Juice of 1/2 lemon
1/4 cup sugar
3 tablespoons flour
2 teaspoons grated lemon rind
About 1 teaspoon freshly grated nutmeg, or less
1 1/2 cups grated sharp Cheddar cheese
Directions
Preheat oven to 425° F.
Grease jelly-roll pan (15 by 10 by 1 inch).
Combine all ingredients for crust; mix well.
Press firmly into prepared pan.
Combine apples with lemon juice; toss to coat well with remaining filling ingredients.
Arrange over crust.
Combine flour and sugar for topping; cut in butter until mixture is crumbly.
Sprinkle over apples.
Bake 25 minutes or until apples are tender and top is brown.
Cut into squares.
