Rice With Lobster Sardinian Style Recipe
Ingredients
| 2 large frozen lobster tails | ||
| Onion | 2/3 Cup (16 tbs), minced | |
| 1 large clove garlic, minced | ||
| Olive oil | 1/4 Cup (16 tbs) | |
| Tomato puree | 2 Can (10oz) | |
| 1 tablespoon chopped fresh basil leaves, or 1 teaspoon dried basil | ||
| 1 tablespoon mild honey | ||
| Salt | 1 Teaspoon | |
| Pepper | 1/8 Teaspoon | |
| Hot cooked rice | 4 Cup (16 tbs) | |
Directions
Boil lobster tails according to package directions.
Cool.
Remove meat from shells and cut into chunks; set aside.
Saute onion and garlic in olive oil 5 minutes.
Stir in tomato puree, basil, honey, salt, and pepper.
Simmer sauce, covered, 45 minutes.
If sauce becomes too thick while it is cooking, stir in 1/2 cup water.
Combine lobster with rice, pour hot sauce over rice, and serve.
