Rice Vermicelli With Vegetables Recipe

Ingredients
1/4 kg. rice or plain vermicelli
1 cup cabbage, finely shredded
1/2 cup fresh green peas, shelled
1/2 cup carrot, diced
1/2 cup spring onions, sliced with the green leeks
3 cloves garlic, crushed
6 french beans, cut into 1" x 1" pieces
1 capsicum cut into bite size
1/2 cup bamboo shoots, (optional)
2 red chillies, seeded
1 tsp. ginger, grated
1 tbsp. nanking sauce
1 tbsp. soya sauce
1 1/2 tsps. salt
1 cup hot water
4 tbsps. peanut oil
Directions
Wash and drain cabbage well.
Soak vermicelli in hot water for 10 minutes and then drain.
In a bowl mix all vegetables with salt, garlic, ginger, chillies and soya sauce.
Heat oil and saute onions for 2-3 minutes.
Add vegetables and stir fry well for 2 minutes.
Add water, cover and simmer for 6-7 minutes.
Add nanking sauce, vermicelli and toss well.
Serve immediately.
