Ingredients
2 cups rice vermicelli/noodles
1 medium onion (Chopped)
1 medium tomato (chopped)
1 clove garlic (Finely chopped)
1" ginger (Finely chopped)
3 green chillies (Slit lengthwise)
Salt to taste
1/2 tsp turmeric powder
1/4 tsp red chilli powder
1 tbsp grated coconut
1/4 tsp cumin seeds
1/4 tsp mustard seeds
Few curry leaves
1/2 tsp urad dal
1/4 tsp chana dal
2 tbsp oil
Cilantro for garnishing
Directions
In a large vessel, take water and bring it to a boil. Add rice vermicelli in it and cook till soft. Drain excess water and keep aside.
Heat oil in a pan, add mustard. When they splutter, add cumin seeds, urad dal and chana dal, saute till the dal are golden brown. Add curry leaves and saute.
Now add chopped onion, green chillies and saute till onions are golden, add turmeric powder and red chilli powder. Mix well.
Add chopped ginger and chopped garlic and continue to saute for few more seconds.
Add chopped tomatoes and salt and cook till mushy.
Now add the cooked rice vermicelli and grated coconut, mix well. Cover and cook for about 5 minutes mixing in between.
Serve hot garnished with chopped cilantro.

Thanks for the comment and suggestion Sanghi. Will try adding veggies next time. I usually add veggies to vermicelli upma only. Never tried adding veggies to rice noodles.
