Ingredients

 Rice vermicelli/Noodles2 Cup (32 tbs)
 Onion1 Medium, chopped
 Tomato1 Medium, chopped
 Garlic1 Clove (5 gm), finely chopped
 Ginger1 Inch, finely chopped
 Green chillies3
 Salt To Taste
 Turmeric powder1⁄2 Teaspoon
 Red chilli powder1⁄4 Teaspoon
 Grated coconut1 Tablespoon
 Cumin seeds1⁄4 Teaspoon
 Mustard seeds1⁄4 Teaspoon
 Curry leaves1 Tablespoon
 Urad dal1⁄2 Teaspoon
 Chana dal1⁄4 Teaspoon
 Oil2 Tablespoon
 Cilantro1 Tablespoon (For garnishing)

Directions

In a large vessel, take water and bring it to a boil. Add rice vermicelli in it and cook till soft. Drain excess water and keep aside.
Heat oil in a pan, add mustard. When they splutter, add cumin seeds, urad dal and chana dal, saute till the dal are golden brown. Add curry leaves and saute.
Now add chopped onion, green chillies and saute till onions are golden, add turmeric powder and red chilli powder. Mix well.
Add chopped ginger and chopped garlic and continue to saute for few more seconds.
Add chopped tomatoes and salt and cook till mushy.
Now add the cooked rice vermicelli and grated coconut, mix well. Cover and cook for about 5 minutes mixing in between.
Serve hot garnished with chopped cilantro.

Thanks for the comment and suggestion Sanghi. Will try adding veggies next time. I usually add veggies to vermicelli upma only. Never tried adding veggies to rice noodles.

Hi Sarita, This is a good healthy and easy dish. We can add finely chopped veggies like beans, carrot and green peas for additional taste.
