Cardamom Flavored Rice Pudding Recipe Video
Ingredients
Rice - 1/4 cup
Water - 1 cup
Lemon zest - to taste
Milk - 1 to 1/2 cup
Sugar - to taste
Cardamom Extract - 2 to 3 drops
Mixed berries - as required
Whipped cream - as required
Directions
MAKING
1) In a saucepan, cook the rice in water for about 10 minutes.
2) Then add lemon zest and sugar to taste.
3) Pour in the milk and allow to cook for another 20 minutes until the rice is cooked and the mixture is thickened.
4) Flavor the rice pudding with a few drops cardamom extract.
5) Allow the rice pudding to cool in the refrigerator until chilled.
SERVING
6) Serve the rice pudding with a mixed berry salad and cardamom flavored whipped cream.

Another advantage of using extract is that it blends evenly and nicely. Plus, you can customize it according to your taste.
Like, for example, Chef Hari mentioned that this dessert is traditionally served with cinnamon. So, if you like, you could have your dessert with cinnamon extract and your guest (who might be more of a cardamom fan) can have his pudding with cardamom :)
