Rice Pudding (Budino Di Riso) Recipe

Ingredients

 
1/2 cup (105 g) uncooked rice
 
1/4 cup sugar
 
3 eggs
 
4 cups (1 liter) milk
 
1/2 cup (80 g) raisins
 
1/4, teaspoon nutmeg
 
1/4 teaspoon salt
 
2 teaspoons lemon juice
 
2 teaspoons grated lemon rind

Directions

Pour rice into a well buttered baking dish.
Mix together the sugar and eggs and beat well.
Add milk, raisins, nutmeg, salt, lemon juice and grated rind.
Mix well.
Pour over the rice and stir.
Dot with butter or margarine.
Bake in a 325°F (160°C) oven for about two hours.
Mix several times during the first hour of cooking.
