Ingredients

 
3/4 cup white rice, medium grain
 
1.5 cups water
 
pinch of salt
 
2 cups milk, divided
 
1/4 tsp salt
 
2/3 cup superfine sugar
 
2/3 cup golden raisins
 
1 egg. beaten
 
1 tsp vanilla extract
 
1 Tbs unsalted butter

Directions

Bring water to a boil, add rice and pinch of salt.
Lower heat, cover and cook for 20 mins. In a medium saucepan
combine 1.5 cups milk, sugar, and rice and salt. Heat, stirring
often over medium flame for 15-20 mins, or until mixture
thickens. Add beaten egg, 1/2 cup milk and raisins and cook 5
mins more. Remove from heat and add vanilla and butter. Stir.

Serve warm or at room temp. sprinkled with nutmeg or cinnamon.
