Ingredients
Butter or margarine - 1/2 cup
Large onion - 1, thinly sliced
Fresh mushrooms - 1 cup sliced or 1 can (6 oz)
Sliced mushrooms - 1/4 cup, drained
Green pepper - finely chopped
Raw long-grain white rice - 1 cup
Dried thyme leaves - dash
Canned chicken broth or chicken bouillon - 2 cups
Directions
GETTING READY
1. Preheat oven to 350F.
MAKING
2. In 1/4 cup hot butter in skillet, cook onion over medium heat until golden.
3. Add mushrooms and green pepper and cook until tender.
4. Remove vegetables and set aside.
5. In same skillet, heat remaining butter add rice and brown slightly, stirring, over low heat.
6. Then stir in vegetables and thyme.
7. Heat chicken broth to boiling point.
8. Stir into rice-vegetable mixture and then turn into 1-quart casserole.
9. Cover and bake 30 to 40 minutes until liquid is absorbed and rice is tender.
SERVING
10. Serve the rice with garnish and side as desired.
