Rice, Leek And Bacon Pie Recipe
The rice, leek and bacon pie is a meal pie that is baked in the oven. Prepared with cooked brown rice, leeks sprinkled with bacon and topped with milk and eggs mix, the rice, leek and bacon pie is is sprinkled with cheese and baked to as a main course. Adapted from Sharp Microwave and Convection Cookbook.
Ingredients
| Butter | 30 Gram | |
| 2 leeks, washed and sliced | ||
| 3 cups cooked brown rice, 6 rashers bacon, chopped | ||
| Eggs | 4 standard | |
| Milk | 1 1/2 Cup (16 tbs) | |
| Cheese | 1/2 Cup (16 tbs), grated | |
Directions
Melt butter for 30 seconds on HIGH, stir in leeks, cook for 3-4 minutes on HIGH.
Preheat oven 180°C.
Stir rice into leek mixture, spread over base of a greased 25cm pie plate.
Sprinkle with bacon.
Beat eggs and milk together.
Pour over bacon.
Sprinkle with cheese.
Place on Low Rack, cook for 20-22 minutes on LOW MIX/BAKE 180°C.
