Rice Flour Cookies Recipe
Ingredients
| Rice flour | 1 Cup (16 tbs) | |
| Oil | 1/2 Cup (16 tbs) | |
| Honey | 4 Tablespoon | |
| Pure vanilla extract | 1/4 Teaspoon | |
| 1 egg, slightly beaten | ||
| Nuts | 1 Cup (16 tbs) | |
Directions
Blend all ingredients thoroughly.
Chill for several hours or overnight.
Roll into balls the size of walnuts.
Arrange on well-oiled cookie sheet.
Press flat with bottom of glass.
Bake at 350 F., about 12 minutes.

I might use 1/2 cup of rice flour and 1/2 cup of almond flour to see how this works and compare it to the original recipe. I'll leave another comment to tell you how it worked.

I just made these & thought they were terrible. No taste & too dry. I followed the recipe as is & even took the 2nd batch out a few minutes early as I thought this may help the oil cooking out of them. They really needed vegan butter or another fat to hold them together & create a more moist cookie. So disappointed.

The dough was a little sticky, but I didn't have time to refrigerate it. I skipped the nuts and the cookies were still very tasty. My four kids and I had a really great tea party with these little treats and everyone got to participate!
