Rice Casserole Recipe

Ingredients
1 cup chopped onions
4 minced garlic cloves
1 pound pork, cut in
1/2-inch cubes
1/2 pound raw shrimp, shelled, deveined, and cut in half
3 tablespoons oil
2 teaspoons salt
1/2 teaspoon freshly ground black pepper
1 teaspoon Spanish paprika
2 cups cooked rice
2 eggs, beaten
4 pimentos, cut julienne
2 hard-cooked eggs, sliced thin
4 bananas, cut in 2-inch pieces
3 tablespoons butter
Directions
Saute the onions, garlic, pork, and shrimp in the oil until browned, stirring frequently.
Mix in the salt, pepper, paprika, and rice.
Cool 15 minutes.
Add the beaten eggs; mix with 2 forks until blended.
Taste for seasoning.
Oil a casserole or baking dish very thoroughly.
Arrange the pimentos and sliced eggs on the bottom; turn the rice mixture into it.
Cover with a piece of aluminum foil and place casserole in a pan of water.
Cook over low heat 30 minutes.
Carefully unmold onto a serving dish and garnish with the bananas which should be sauteed in the butter.
Mix in the salt, pepper, paprika, and rice.
Cool 15 minutes.
