Ingredients

 
1/4cup seedless raisins
 
1 cup raw rice
 
1 small onion, minced
 
2 tablespoons shortening or fat from fowl
 
1 large orange
 
1/2teaspoon salt
 
1/8 teaspoon pepper
 
1/2 teaspoon celery salt

Directions

Cook rice in boiling lightly-salted water until barely tender.
Drain thoroughly.
Saute onion in shortening until golden.
Grate skin of orange; peel and remove membrane and seeds; chop orange meat coarsely.
Place peel, chopped orange, rice, onion and raisins in a bowl.
Add combined seasonings and mix well.
Makes about 4 cups of dressing, enough for a 5- to 6-pound bird.
For duck, turkey, chicken or goose.
