Rice And Codfish Recipe
Ingredients
| Codfish package | 1 | |
| Salt pork | 1/8 pound, chopped | |
| Onion | 1 , chopped | |
| Pimientos | 2 , chopped | |
| 3 tomatoes, peeled and chopped | ||
| Olive oil | 1/2 Cup (16 tbs) | |
| Garlic | 1 Clove (5gm), minced | |
| Stuffed olives | 1/3 Cup (16 tbs), sliced | |
| Capers | 1 Tablespoon | |
| Water | 2 1/2 Cup (16 tbs) | |
| Raw rice | 1 Cup (16 tbs) | |
Directions
Freshen fish as directed on package.
Cut in small pieces.
Reserve; saute salt pork, onion, pimientos, and tomatoes in oil in skillet until onion is tender.
Add garlic, olives, and capers.
Cook, stirring, for 1 minute; add water.
Bring to boil; add rice and fish.
Cover.
Simmer for 30 minutes until rice and fish are tender; add salt if necessary
