Rice With Citrus Fruit Recipe
Ingredients
1 1/2 cups (375 ml) water
1/4 cup (60 ml) orange juice
1/2 cup (125 ml) white rice
1 1/2 cups (375 ml) water
1/4 cup (60 ml) grapefruit juice
1/2 cup (125 ml) brown rice
3 oranges, peeled, separated into segments
2 grapefruit, peeled, separated into segments
Juice of 2 lemons
Peel of 1/2 lemon, coarsely grated
1 tsp (5 ml) fresh mint, chopped
Salt and pepper
Directions
– In a saucepan filled with 1 1/2 cups (375 ml) water, pour orange juice and cook white rice for about 20 minutes.
– In a separate saucepan filled with 1 1/2 cups (375 ml) water, pour grapefruit juice and cook brown rice for about 20 minutes.
– In a bowl, mix cooked white and brown rice with oranges, grapefruit, lemon juice, lemon peel and chopped mint. Season with salt and pepper and toss.
