Rice Vegetable Medley Recipe
This Rice Vegetable Medley is superly delicious ! I love this mixed fare rather than serving rice with a vegetable accompaniment on busy days because it saves me a lot of time I'd have spent cooking two different items altogether. Ingredients
| Butter/Margarine | 3 Tablespoon | |
| Onion | 3/4 Cup (16 tbs), chopped | |
| Zucchini | 1 1/2 Pound, thinly sliced | |
| Whole kernel corn | 1 Can (10oz), drained | |
| Tomatoes | 1 Can (10oz), undrained | |
| 3 cups cooked enriched white rice | ||
| Salt | 1 1/2 Teaspoon | |
| Ground black pepper | 1/4 Teaspoon | |
| Ground coriander | 1/4 Teaspoon | |
| Oregano leaves | 1/4 Teaspoon | |
Directions
1. Heat butter in a large saucepan.
2. Add onion and zucchini; cook until tender, stirring occasionally. Add corn, tomatoes with liquid, cooked rice, salt, pepper, coriander, and oregano; mix well.
3. Cover and bring to boiling; reduce heat and simmer 15 minutes.
