 Onion3/4 Cup(16 tbs), chopped
 Celery3/4 Cup(16 tbs), chopped
 Butter/Margarine1/2 Cup(16 tbs), divided
 Cooked rice3 Cup(16 tbs)
 Raisins3/4 Cup(16 tbs)
 Walnuts1/3 Cup(16 tbs), chopped
 Honey3 Tablespoon
 Lemon juice2 Tablespoon
 Ground cinnamon3/4 Teaspoon
 Salt1/2 Teaspoon
 Pepper1/8 Teaspoon
 6 Cornish game hens

Directions

In a skillet, saute onion and celery in 3 tablespoons butter until tender; remove from the heat.
Add rice, raisins, walnuts, honey, lemon juice, cinnamon, salt and pepper; mix well.
Stuff hens.
Place on a rack in a large shallow baking pan.
Soften the remaining butter; rub over skins.
Bake, uncovered, at 375° for 1 hour or until the juices run clear.
