Rice Salad With Cottage Cheese Recipe
Ingredients
3 cups (750 ml) cooked rice 2 carrots, grated
1/4 cup (60 ml) celery, finely chopped
1/4 cup (60 ml) sweet red pepper, diced
1/4 cup (60 ml) parsley, chopped
Dressing
1 cup (250 ml) cottage cheese
1 cup (250 ml) sour cream salt and pepper
Directions
In a salad bowl, mix rice, vegetables and parsley.
In a small bowl mix dressing ingredients.
Pour over salad, mixing well.
