Rice Salad Bowl Recipe

Ingredients
1 cup cooked enriched rice
4 ounces cooked artichoke hearts, sliced
4 ounces chopped scallions
2 medium tomatoes, diced
2 teaspoons drained capers
1 recipe Mock Hollandaise Sauce ( count 1 tablespoon daily fat allowance per serving)
Directions
In separate salad bowls, divide equally rice, artichoke hearts, scallions lions, tomato and capers.
Chill.
Serve with Mock Hollandaise Sauce also divided equally.
